Instagram Gårdshem, the farm shop in Umeå, posted a short film on Instagram from the mushroom racks in Burträsk. Their point is not only that the mushrooms are grown locally. The whole process is what sets them apart.
A lot of mushrooms on shop shelves are grown with spawn imported from China, or on ready-made substrate from other countries. Here both the spawn and the substrate are Swedish. The substrate is developed in-house from local residues, including sawdust that would otherwise have been burned, so the material becomes food instead of fuel.
The cultivation is organic and KRAV-certified. For Gårdshem this is more than a good ingredient: it is the kind of local producer they want to highlight — food production that uses resources, cuts waste, and makes something worth selling.
